How cute are these for fall? Although I am not quite ready to except the fact that summer is almost over, I do enjoy fall. Especially all of the foods that are popular for fall. One word…Pumpkin!

Meatloaf Cupcakes with Sweet Potato Mash

These meatloaf cupcakes are super easy to make and reheat wonderfully. I piped the sweet potato mash with a pastry bag to make them look pretty, but you could easily use a spoon or an ice cream scooper.

Ingredients
  1. Ingredients for the Meatloaf
  2. 1 pound ground turkey
  3. 1 cup zucchini, shredded
  4. 1/2 small onion, diced
  5. 1/2 cup panko breadcrumbs
  6. 1/4 cup ketchup
  7. 1 egg
  8. Salt and pepper to taste

  9. Ingredients for the Mashed Sweet Potatoes
  10. 1 pound sweet potatoes, peeled and cubed
  11. 1 tablespoon butter
  12. 2 garlic cloves, minced
  13. 2 tablespoons sour cream or Greek yogurt
  14. 1/2 cup milk of your choice (I used an almond/coconut blend)
  15. Salt and pepper to taste
Instructions
  1. Starting with the meatloaf, preheat oven to 350 degrees. Line muffin tin with liners and set aside.
  2. In a large bowl add the ingredients for the meatloaf and mix with your hands until combined.
  3. Place mixture into muffin tin and make sure they are flat. Bake for 18-20 minutes.
  4. Moving on to the Mashed Sweet Potatoes, bring a large pot of water to a boil and add cubed sweet potatoes. Boil for about 15-20 minutes or until soft.
  5. Drain sweet potatoes and add to a large bowl. Add the remaining ingredients for the mashed sweet potatoes and mash with a potato masher or use a mixer.
  6. Top baked meatloaves with mashed sweet potatoes I used a pastry bag, but a spoon or ice cream scoop would work.
