These past month has been absolutely crazy! We spent a wonderful few weeks back in the Northeast with our family and friends. We got in tons of beach time, amusement parks, lunch dates, dinners, cocktails, a wedding, and bbq’s. It really flew by in a blink of an eye. Time does sure fly when you are having fun! It’s zucchini season! That time of year where vegetable gardens will be overflowing with zucchini and has you wondering what on earth you are going to with all of it. Well add Baked Zucchini Tots to your list!
It’s officially the Christmas season! Time for some delicious baked goodies. As I have mentioned in the past I am not a baker. Baking requires precise measuring to get it right. I like to just throw things together… A little bit of this and a little bit of that and viola, dinner.
I have been on a serious meatball kick lately. Good thing my family loves them and they are quick and easy to make.

Back to school time is quickly approaching… Ugh! Although I am soaking up every last second of summer I do need to prepare somewhat for back to school. And also mentally prepare for the chaos to begin!
This was our dinner tonight and oh boy it was gooood! I saw the recipe a while back on Kevin’s site and had to try it. And now since it’s summer, zucchini’s at it’s best.
Since we already ate our own garden’s stock, I stopped at the local farmer’s stand on the way home a picked up a bunch. With zucchini, peppers and onions in season right now this meal is not only healthy, but affordable.
Got zucchini? Holy smokes we have lots and lots of zucchini growing in our garden right now! So I am trying to get creative with recipe ideas.

The local produce stands are open for the summer! Nothing tastes better than fresh local produce. It is also awesome to support your local farmers.
Everything looks so delicious it’s hard to choose so I usually end up with a bunch of veggies and zucchini is one of them. I never have too many zucchini recipes. So when I saw this recipe on Closet Cooking I knew this would be perfect. Thanks Kevin!
