Seriously, these brownies are super moist, chocolatey, and no one will guess they are make with black beans instead of flour. I promise! They will make a perfect treat for your Valentine!

Ingredients
  1. 1 (14 oz) canned low-sodium black beans, rinsed and drained
  2. 2 large eggs
  3. 1/2 cup cocoa powder
  4. 3/4 cup sugar
  5. 1/2 teaspoon oil
  6. 1 tablespoon unsweetened almond milk (or dairy, skim)
  7. 1 teaspoon balsamic vinegar
  8. 1/2 teaspoon baking powder
  9. 1/2 teaspoon baking soda
  10. 1/2 teaspoon of freshly ground coffee or instant coffee
  11. 1 cup semisweet chocolate chips, divided
Instructions
  1. Preheat oven to 350 degrees. Spray a 9X9 inch square baking dish with cooking spray and line with parchment paper leaving a 2 inch overhang on each side.
  2. In a blender or food processor add the beans, eggs, cocoa powder, sugar, oil, almond milk, balsamic, baking powder, baking soda, and coffee and blend until smooth.
  3. Fold in 1/2 cup chocolate chips until combined. Pour the brownie batter into the pan. Sprinkle with remaining chocolate chips.
  4. Bake for about 40 minutes depending on your oven or until a toothpick comes out clean.
  5. Allow brownies to completely cool and slice into squares.
