Ahhhh.  Finally home after a 3 week trip to Pennsylvania for the holidays and then down to Disney World.  It was so nice to see all our family and friends but we’re happy to be back.

Blackened Chicken Gumbo

This is my first attempt at making gumbo and I think it turned out pretty darn good! I had originally made this recipe for Simply Organic’s Cajun style recipes and I just had to to share it with y’all. I made this recipe using chicken and sausage, but I think shrimp or ham would also make a delicious addition.

Stuffing In A Bundt Pan

Happy Thanksgiving week all! Sorry this post is so late. I had full intentions of posting this recipe last week and things just got crazy. Tis the season!

Even if you have already gotten your ingredients for Thanksgiving stuffing, no worries,  you can still make this recipe and bake it in a bundt pan. Black Bean Chili with Acorn Squash and Toasted Pepitas

Hope y’all had an awesome Halloween! We sure did! We had some friends over for a light dinner. I made this Pumpkin Soup and this Pomegranate Cashew Arugula Salad with Balsamic Dressing and homemade Mac and Cheese. With our bellies full we were ready to hit the neighborhood for some serious trick or treating! The kids ended up lots of treats and the parents enjoyed some wine and good conversation. It was a great night!
