If you have been following my blog you know we have been busy house hunting. Well… We found the perfect house. It has pretty much everything we were looking for and a cute little yard with pool too. EEEK I am so excited! I have always wanted a pool!

I am also super excited to have a great place to entertain. Once I get back to entertaining one of the first things on the menu will be this Asparagus Avocado Tomato Salad.

It’s so fresh, delicious and easy to make! My only recommendation is if you are making this salad ahead of time, wait to add the avocado until just before serving so it doesn’t brown.

Ingredients
  1. For the Salad
  2. 1 pound asparagus, trimmed and cut into 2 inch pieces
  3. 2 medium tomatoes, diced
  4. 1 ripe avocado, diced
  5. 1 cup fresh basil leaves, chopped
  6. For the Dressing
  7. 1/4 cup olive oil
  8. 2 teaspoons lemon juice
  9. 2 teaspoons dijion mustard
  10. Salt and pepper
Instructions
  1. Steam asparagus for 5-7 minutes or until tender. Allow to cool for a few minutes.
  2. In a bowl add asparagus, tomatoes, avocado, and basil and set aside.
  3. In a separate small bowl whisk together the ingredients for the dressing. Pour over salad and gently stir until combined.
  4. Serve immediately
