Greek Tortellini Salad

Hope y’all are enjoying your summer! We sure are! We have been going non stop with swimming, movies, gymnastics, crossfit, dance, and hanging out with friends and it is only June 🙂 I wouldn’t have it any other way!

As usual in the summer I am one not to spend much time in the kitchen. I want easy light meals, preferably on the grill. I whipped up this salad the other day and it was so good I had to make it again.

This salad is great for leftovers for lunch or perfect for summer picnic.

Ingredients
  1. 1 10-15 ounce package of refrigerated tortellini (I used spinach)
  2. 1 1/2 cups of grape tomatoes, cut in half
  3. 1 large cucumber, chopped
  4. 1 cup kalamata olives, cut in half with pit removed
  5. 1/2 red onion, diced
  6. 3/4 cup feta cheese, crumbled
  7. For the Dressing
  8. 1/4 cup olive oil
  9. 3 tablespoons red wine vinegar
  10. 1 clove of garlic, minced
  11. 1/2 teaspoon dried oregano
  12. Salt and pepper to taste
Instructions
  1. Bring a large pot of water to a boil. Add tortellini and cook according to package directions. Drain tortellini and let cool.
  2. Place the cooled tortellini, tomatoes, cucumber, olives, onion, and feta cheese in a large bowl.
  3. Prepare dressing in a small bowl and add to salad. Gently mix until well coated.
  4. Serve at room temperature or place in refrigerator.
