Guacamole Shrimp Wonton Cups

Now that football season is upon us I am always on the hunt for creative, delicious, and of course easy appetizers to share.

This recipe is looks so fancy, but it is so simple to make! I cheated and bought the guacamole already made at the grocery store, which cut my time in half.

You definitely want to make this recipe and serve it right away so the guac doesn’t brown. Yuck! If needed you could probably bake the wontons ahead of time, store in an airtight container until you are ready to assemble and serve.

Ingredients
  1. 24 wonton wrappers
  2. 24 medium shrimp, peeled and deveined
  3. 1 tablespoon olive oil
  4. 2 cloves garlic, minced
  5. 1 tablespoon cajun seasoning
  6. Salt and pepper to taste
  7. 1/2 cups homemade guacamole or store bought
  8. 2 tablespoons fresh cilantro, chopped (optional)
Instructions
  1. Pre heat oven to 350 degrees. Spray a mini muffin pan with non stick cooking spray.
  2. Place a wonton wrapper in each muffin tin, gently pressing the wrapper to the sides of the tin. Make sure the center stays open.
  3. Bake for about 10-12 minutes or until golden brown.
  4. In a medium bowl add shrimp, olive oil, garlic, cajun seasoning, salt, and pepper and combine.
  5. Heat 1 tablespoon of oil in a skillet over medium high heat. Add shrimp to heated skillet and cook until pink.
  6. Remove wontons from the oven and fill each one with guacamole and top with 1 shrimp. Top with cilantro and serve immediately.
