Caprese Garlic Bread

It’s tomato season and anything caprese is my absolute fav! I typically don’t eat a lot of bread, but when I do it is definitely going to be this Caprese Garlic Bread! Oh my gosh it is so good and so easy to make.

Ingredients
  1. 1 loaf ciabatta or Italian bread, sliced in half
  2. 3 tablespoons organic grass fed butter
  3. 1 tablespoon olive oil
  4. 3 cloves garlic, minced
  5. 12 ounces fresh mozzarella cheese, sliced
  6. 1/2 cup balsamic vinegar
  7. 2 medium tomatoes, sliced
  8. Salt and pepper to taste
  9. 1/3 cup fresh basil, chopped
Instructions
  1. Preheat oven to 400 degrees. Place sliced bread cut side up on a baking sheet.
  2. In a small bowl add butter, olive oil, and minced garlic and mix until combined. Spread onto bread halves. Place sliced mozzarella cheese on top of the bread in a single layer. Bake for about 12-15 minutes or until cheese in melted and bubbly.
  3. While bread is baking prepare the balsamic reduction. Place balsamic in small sauce pan and bring to a boil. Reduce heat to low and simmer for about 6 minutes or until mixture is reduced by half. Set aside and let cool.
  4. Remove bread from oven and top bread with tomato slices, salt, pepper, and fresh basil. Drizzle with balsamic reduction. Cut into slices and serve.
