Black Bean Chicken Enchilada Cups

During the holidays we have had quite a few parties to attend. Yay! I love parties! I usually try to bring something a little different. Since I have a food blog I feel it is expected of me to bring something amazing. No pressure!

A few weeks ago I made Buffalo Chicken Cups for my neighborhood party and they where deeeelish! So for the next shin dig I wanted to switch it up a bit. I came up with a black bean and chicken enchilada cups. Who wouldn’t love an enchilada in a cup?

Life has been CRAZY the last few weeks. My husband got a new job and we are relocating from the Philadelphia area to Dallas in January. We sold our house rather quickly and are currently staying with my sister and her family until the big move. Easy Extra Creamy Hummus

I have made lots of hummus in my life, but could never figure out how to get that super creamy stuff you get at the store. I found the secret. Squeeze the skins off of those little buggers. It is kind of a pain, but totally worth it.  The texture is so creamy, you’ll be glad you did!

No Bean Turkey Veggie Chili

Chili is one of my favorite things to make during the cooler months. It is easy to make and it hits the spot on these chilly nights. I made this chili without beans and loaded it with veggies instead, then topped it with guacamole and fresh cilantro. You can easily add any toppings you like.

Loaded Baked Potato Soup

Oh my! This soup is soooo gooood! My daughter and I ate the entire pot in 2 days! Oops!

My husband was away this week for work and didn’t get any. So I guess I will be making another pot of this deliciousness this weekend. He is the official taste tester for this blog after all.  It’s too good, I can’t keep it from him!
