I originally made this Broccoli and Cheese Soup recipe for my blog over 2 years ago. Yikes! Boy does time fly! I have been going through my recipe archives lately and some of them are have serious need for updating. While the recipes are great the photos are blahhh. I have come a long way in my photography, but I still have lots more to learn.
We have been so spoiled here in Dallas with a very mild winter. And then just like that it’s freezing cold, with ice and snow.

So who’s ready for spring??? This girl right here is! Although we have had a pretty mild winter here in Dallas and I should not complain, but I miss the flowers and most of all my vegetable garden. Which I just reminded myself that I need to do some research on gardening in this new to me climate. I think I can start planting in March! Yippee!
Spring is right around the corner! Thank goodness! This winter seems to be taking extra long to be rid of. Although we have had a few unseasonably warm days here in Dallas, I am ready to pack away my boots and get out my flip flops and start grilling! But for the mean time I will make soup. Not just any soup, but lasagna soup!

My family and I are spending our last 2 weeks in PA before making our big move to Dallas, TX. These last few weeks here have been freeeeezing and snowy. This kind of weather makes me crave warm hearty soup!
I know it’s not asparagus season, but the market had it on sale so I stocked up. I usually prefer to roast my asparagus, but I wanted to try something new. Since it’s soup season I figured asparagus soup would be perfect.
As many of you know Sunday is my prep day for the week day. I try to cook a few meals for the crazy week. Welp, this Sunday was a wash in the kitchen.
Oh my! This soup is soooo gooood! My daughter and I ate the entire pot in 2 days! Oops!
My husband was away this week for work and didn’t get any. So I guess I will be making another pot of this deliciousness this weekend. He is the official taste tester for this blog after all. It’s too good, I can’t keep it from him!
