Sheet Pan Shrimp Boil

Hey y’all! So sorry it’s been awhile since I have posted. Life has been so busy and hectic, I needed to take a break from the blog. So now that we are in the middle of summer I am hoping to have some free time to post some new awesome recipes.

Shrimp-Boil-Sheet-Pan-03

I know I am a little late to the party, but I am seriously loving these sheet pan recipes that keep popping up on Pinterest. They are super easy, pretty healthy, and best of all virtually no clean up!

Sheet Pan Shrimp Boil

This shrimp boil recipe is a breeze to make simply toss everything on a pan, toss in the oven, top with parsley and fresh squeezed lemon, and dinner is served!

Sheet Pan Shrimp Boil

This also a perfect recipe for entertaining guests too. Looks so fancy with minimal effort. My favorite kind of entertaining!

Lightened Up Sheperd’s Pie

So this recipe is totally a day late! Ugh, with Spring break last week and and life’s daily craziness I could not get it together to share this recipe with you before St. Patty’s day. Sorry friends!  Just because St. Patty’s day is over doesn’t mean you can’t make Sheperd’s Pie!

Sweet Potato Hash Brown Cups

I’m sure by now you have all figured out that I love to make foods in a muffin pan. They look so darned cute and usually, and I use that term loosely, helps me with portion control. Umm, let’s just say these hash browns got totally out of portion control! I could not stop eating them!

Blackened Chicken Gumbo

This is my first attempt at making gumbo and I think it turned out pretty darn good! I had originally made this recipe for Simply Organic’s Cajun style recipes and I just had to to share it with y’all. I made this recipe using chicken and sausage, but I think shrimp or ham would also make a delicious addition.
