I sometimes struggle with breakfast ideas. I get stuck in a breakfast rut and end up eating the same thing over and over again. Blah, booooring! I think I just found my new favorite breakfast. No more plain Jane breakfast for me this week!

One Skillet Sweet Potato Hash

Ingredients

  • 3 tablespoons coconut oil
  • 1/2 medium onion, diced
  • 1 pepper, diced
  • 3 Italian sausages, remove casing
  • 2 medium sweet potatoes, peeled and shredded, I used the attachment on my food processor
  • 2 cups spinach
  • 3-4 eggs
  • Sliced Haas avocado and fresh chopped cilantro for topping

Directions

  1. Pre heat broiler on oven.
  2. In a oven safe skillet heat coconut oil until hot and add onions and peppers and sauté for about 3 minutes.
  3. Add sausage and stir for 4 minutes or until no longer pink.
  4. Add shredded sweet potato and stir frequently for another 4 minutes.
  5. Add spinach to skillet until wilted.
  6. Make 3-4 small wells in the skillet and crack eggs into the well.
  7. Place 6 inches under the broiler and cook for 2 minutes the yolk will be runny. 3 minutes yolk will almost be solid, and 4 minutes will be a hard yolk.
  8. Remove from oven and top with avocado and cilantro.
