No Mayo Potato Salad

No mayo potato salad is a delicious side dish that is perfect for the summer. Let’s face it mayo is no good for you and adds unnecessary calories and fat to your diet. I promise you won’t even miss the mayo in this potato salad. Plus, you won’t feel guilty if you want seconds!

No Mayo Potato Salad

Oh, and I forgot to mention it is super easy to make!

No Mayo Potato Salad

Serves 4. Adapted from Thug Kitchen

Ingredients

  • 1 1/2 lbs red or Yukon gold potatoes
  • 1/3 cup shredded carrot
  • 1/3 cup diced celery
  • 1/4 cup dill, chopped
  • 1/4 cup chives or green onion
  • 1 teaspoon Dijon mustard
  • 3 tablespoons white wine or white vinegar
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Directions

  1. Bring a large pot of water to a boil and add a pinch of salt.
  2. Cut potatoes into bit sized pieces and add to boiling water. Boil for about 10-15 minutes, depending on size of cut potatoes. Don’t over cook. You should easily be able to stab with at fork. 
  3. Meanwhile, in a blender or processor mix Dijion mustard, vinegar, lemon juice, and garlic. Set dressing aside.
  4. Drain potatoes and let them cool for a few minutes. Add carrots, celery, chives (or green onion), dill, salt, and pepper. Mix well. Refrigerate for at least 30 minutes.
