Grilled Pineapple Chicken Teriyaki Burgers

Yippee!  Summer break has officially begun! Time for vacations, picnics, pool parties, relaxing, and of course grilling. To celebrate summer break I made  these Grilled Pineapple Chicken Teriyaki Burgers that scream summer!

Grilled Pineapple Chicken Burgers

If you have never grilled pineapple here is your perfect chance. The pineapple slices caramelize and become super sweet. It is a match made in heaven when combined with the teriyaki sauce.

If you are making these for a party simply prep everything ahead of time and refrigerate until you are ready to grill. I served mine on a bed of lettuce, but you could also serve them on buns if you choose.

Ingredients
  1. For the Teriyaki Sauce
  2. 1/2 tablespoon cornstarch
  3. 1/4 cup cold water
  4. 1/4 cup soy sauce
  5. 1/2 cup pineapple juice
  6. 3 tablespoons brown sugar
  7. 1/2 teaspoon fresh ginger, finely grated
  8. 1 garlic clove, minced

  9. For the Burgers
  10. 1 pound ground chicken
  11. 1 garlic clove, minced
  12. 2 tablespoons fresh cilantro, roughly chopped
  13. 1 teaspoon fresh ginger, finely grated
  14. 1/3 cup panko
  15. 1 teaspoon sriracha (or more if you like it spicy)

  16. For the Topping
  17. 4 slices fresh pineapple, cored
  18. 4 lettuce leaves
  19. 4 hamburger buns (optional)
Instructions
  1. For the teriyaki sauce
  2. Combine cornstarch and water in a small bowl and stir to dissolve. Set aside.
  3. In a small saucepan add soy sauce, pineapple juice, brown sugar, grated ginger and garlic. Heat over medium low and bring to a light boil. Simmer until sauce reduces, about 15 minutes. Add cornstarch and water mixture and simmer until thickened. Set aside to cool.
  4. For the burgers
  5. In a large bowl add all of the ingredients for the burgers. Mix well with your hands and form into 4 burger patties.
  6. Heat grill over medium high heat. Brush the grated with oil. Place burgers on heated grill and cook for about 6 minutes on each side or until no longer pink.
  7. While the burgers are cooking add the sliced pineapple to the grill and cook for about 3 minutes each side.
  8. Serve burgers topped with the teriyaki sauce and pineapple slices.
