Cilantro Avocado Dressing

Now that the holidays are over it is time to back on track with my eating!  I really tried not to overdo it over the holidays, but I was definitely feeling the effects of not eating properly.

My go to lunch is a salad loaded with veggies and grilled shrimp topped with this delicious healthy dressing! The dressing also makes the perfect dip for veggies or would taste great drizzled over tacos.

I make all of my own dressings in my Cuisinart food chopper. If you don’t have one I recommend you get one, it is a lifesaver when making your own dressings. This way you can control the ingredients. No sugar or other nonsense that is in the bottled stuff. This little food chopper is hands down one of my favorite kitchen tools.

Tips and Tricks
The dressing will last 3 days in the fridge in a covered container. Just give a stir before using.

 

Ingredients

  • 1 large ripe avocado, pitted
  • 1 garlic clove, minced
  • 1 tablespoon fresh cilantro
  • 1/2 lemon or lime, juiced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1/4 to 1/2 cup water

Directions

  1. In a small food processor or blender scoop out avocado.
  2. Add garlic, fresh cilantro, lemon or lime juice, red wine vinegar, and olive oil. Process until smooth and well combined.
  3. Add water and process to reach desired consistency.
